CURRIED APPLE & ADZUKI BEAN SOUP

Ingredients

4 tablespoons Organic Roasting & Frying Oil

2 onions, chopped

1 teaspoon Turmeric 60g

1 teaspoon Ground Cumin Seed

1 teaspoon ground coriander seeds

1 teaspoon dry mustard

¼ teaspoon Ground Cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon Paprika

1 teaspoon fresh ginger, grated

6 tart apples, peeled and quartered

1 pack Vegetable Broth

1 can Organic Adzuki Beans

juice of 1 lemon

Natural Sea Salt to taste

Method

Heat oil in a medium-size pot and sauté the onions until soft. Stir in the spices. Add the apples and broth, and simmer until the apples are soft.

Puree half of the adzuki beans in a blender, then add to the soup. Add the remaining beans and heat the soup through.

Take the pot off the heat, stir in the lemon juice and season to taste.

Transfer into bowls and serve.
