Black Bean Soup

Black beans are a brilliant addition to anyone’s diet, vegetarian or not! They are a low fat source of plant-based protein and chock full of fibre to keep you feeling fuller for longer. The dark colour gives this one away, but black beans are also high in antioxidants to keep your body healthy and your skin looking young! Be careful to watch the sodium content when buying canned beans though. Excessive sodium intake directly causes high blood pressure and water retention, so it is worth limiting this wherever possible.

This soup is super nourishing, and freezes well, so you can make up a big batch for those cold nights.


3 cans Organic Black Beans

3 celery stalks with leaves, chopped

1 onion, chopped

1 red pepper, chopped

1 jalapeno pepper, seeded and chopped

2 tablespoons Organic Olive Oil, Extra Virgin Cold-Pressed

4 cloves garlic, crushed

800ml Low Sodium Vegetable Broth

1 can Organic Tomatoes, Chopped

3 tablespoons Whole Cumin Seed

1 bay leaf

freshly ground black pepper, to taste

juice of 1 lime


In a small bowl, mash one can of black beans, Set aside.

In a large saucepan, saute the celery, onion, red pepper and jalapeno in oil until tender. Add garlic, and cook 1 minute longer.

Stir in the broth, tomatoes, cumin, bay leaf, pepper, remaining cans of beans and the mashed beans. Bring to a boil. Reduce heat, cover and simmer for 15 minutes.

Discard bay leaf. Stir in lime juice and serve.
