Fully Loaded Nachos

Ingredients

HOT MAYO

¼ cup Organic Egg Free Vegan Mayonnaise

2 teaspoons sriracha hot sauce

CORIANDER SOUR CREAM

½ cup Organic Cashews, RAW Whole (soaked for 6 hours)

¼ cup almond milk

½ cup coriander

½ lime, juiced

2 teaspoons Organic RAW Apple Cider Vinegar

½ teaspoon garlic powder

TOMATO SALSA

2 large ripe tomatoes, finely diced

1 capsicum, finely diced

½ red onion, finely diced

GUACAMOLE

2 avocados

juice of 1 lime (or lemon)

salt, to taste

FOR THE NACHOS

1 can Organic Black Chilli Beans

Sesame Blues, Corn Tortilla Chips

lime wedges, to serve

Method

In a bowl, whisk together all the hot mayo ingredients until smooth. Set aside.

Add all the coriander sour cream ingredients to a blender and process until smooth. Set aside.

Add all the salsa ingredients to a bowl and mix well. Set aside.

Mash avocado with the remaining guacamole ingredients in a bowl. Set aside.

Heat the black chilli beans over medium heat.

To assemble, arrange your Sesame Blues in a large bowl, top with the beans, salsa and guacamole. Finish off your epic nachos with generous amounts of coriander sour cream, mayo hot sauce and lime wedges on the side. Enjoy immediately.
