CURRIED CARROT DIP

Ingredients

½ cup Organic Sunflower Butter

⅓ cup Organic Coconut Cream

2 teaspoons Thai red curry paste

2 teaspoons tamarind paste

½ teaspoon Natural Sea Salt

1½ cups carrot (grated)

Method

Blend all ingredients, except the carrot, in a food processor.

Gradually add the grated carrot, and pulse to mix after each addition. If you have trouble getting the carrot to blend, simply add a little extra coconut cream.

Transfer the mixture to a bowl. Serve chilled.
