WARMED LENTIL SALAD

Ingredients

1 block tofu, drained, sliced and patted dry with a paper towel

3 tablespoons Organic Olive Oil, Extra Virgin Cold-Pressed

15-20 cherry tomatoes

1 red onion, diced

1 teaspoon dried herbs

1 can Organic Brown Lentils (rinsed and drained)

1 courgette, sliced lengthways

Organic Paleo Savoury Mix (to serve)

Method

Preheat oven to 200°C and line a baking tray with baking paper.

Add tofu slices to prepared tray, drizzle with 1 tablespoon of the oil, and bake for around 30 minutes, until lightly browned, turning half way through. Remove from oven and set aside.

Add tomatoes to tray, drizzle with 1 tablespoon of the oil and roast for about 10 minutes.

Add remaining tablespoon of the oil to a pan over a medium heat. Add onion and herbs and cook until onions are soft and translucent. Add lentils and heat through.

In a large bowl combine lentils, onion, tofu, tomatoes and fresh courgette. Garnish with more herbs or micro greens.
