ROSEMARY BULGHUR WHEAT W/ PAPRIKA CHICKPEAS

Ingredients

1 cup Organic Wheat, Bulghur

1 can Organic Chickpeas (Garbanzo Beans) (drained, rinsed & patted dry)

3-4 cups Brussels Sprouts, quartered

1 tablespoon Organic Cayenne Pepper (adjust to taste)

1 red onion, finely sliced

sprig of fresh rosemary, finely sliced

half a jar of Organic Kalamata Olives, Whole With Pits pitted and halved

1 tablespoon Organic Olive Oil, Extra Virgin Cold-Pressed

salt and pepper, to taste

Method

Preheat oven to 200°C and line a baking tray with baking paper.

Prepare bulghur wheat according to packet directions. Set aside.

Place the chickpeas and Brussels sprouts on prepared baking tray, sprinkle with cayenne pepper, and bake for 20 minutes, turning half way through to achieve even baking.

Combine bulghur wheat, chickpeas, Brusssels sprouts, onion, rosemary and olives in a bowl. Drizzle with olive oil and season to taste.
