Quinoa Pomegranate Almond Crunch Salad

Ingredients

Organic Super Grain Mix cooked and cooled (to save time, cook the night before and chill in the fridge until you’re ready to make the salad)

4 spring onions, chopped

1 cup fresh pomegranate seeds

1 cup Italian parsley, chopped

1/2 cup Organic RAW Whole Almonds roasted and chopped

1/2 cup Organic Olive Oil, Extra Virgin Cold-Pressed

½ orange, zest (of half) and juice

1 lemon, zest and juice

½ tsp sea salt, more to taste

½ tsp cracked pepper

¼ tsp allspice

¼ tsp cinnamon

1-2 chopped Avocados

Method

Add cooked quinoa, spring onions, parsley, pomegranate seeds (reserve a handful) and almonds in a bowl.

Add orange and lemon zest and juice, olive oil, salt and spices

Taste and adjust seasoning to suit.

Add avocado just before serving, and sprinkle over remaining pomegranate seeds.
