Ready in 60 minutes | Serves 12
Ideal for after school, after work or as a treat snack with benefits! These can be kept in the freezer for around 3 months, so it’s a good idea to make plenty!
6 Bananas, peeled and chopped half through the middle, not lengthways
2 cups frozen berries, such a raspberries or strawberries
1/4 cup Organic Maple Syrup
1 tsp Organic Coconut Oil, Virgin Cold-Pressed melted
A squeeze of lemon juice, around 1 tsp
1/4 cup Organic Chia Seeds
1 cup Dark Chocolate 70% Cacao or any dark chocolate
12 ice block sticks
First, place the berries, lemon juice, melted coconut oil and syrup into a blender and whizz to combine. You want it fairly smooth with little or no lumps if possible.
Pour into a bowl and stir through the chia seeds. Place in the fridge to set for 30 minutes, stirring occasionally if you can remember.
Place each banana half onto an ice-block stick and coat with the berry chia jam. Place on a lined tray and pop in the freezer to set, around 30 minutes should be enough.
Lastly, dip each pop into the melted chocolate and place back on the tray and in the freezer to set until ready to enjoy.
You can also coat the outside with some chopped nuts or desiccated coconut to be extra impressive!
