Ready in 30 minutes | Serves 4
½ cup Organic Tahini, Unhulled
2-3 garlic cloves, grated
2 tablespoons Organic Tamari Soy Sauce
1 tablespoon Organic Vinegar, Brown Rice
zest and juice of 1 lemon
1 cup Organic Quinoa, White
½ tablespoon Organic Coconut Oil, Virgin Cold-Pressed
1 garlic clove, finely chopped toasted quinoa and greens w/ tahini dressing
handful of kale, leaves removed and torn
small handful of baby spinach
To make the dressing, whisk all ingredients in a small bowl and then transfer to a glass jar and pop in the fridge until you’re ready to serve up.
Place the quinoa in a medium saucepan with 2 cups of water. Bring to the boil, then reduce to a simmer for around 15 minutes until you see those tails form! Transfer to a bowl and pop in the fridge to chill.
Heat a pan over medium heat, melt the coconut oil, then add the garlic and savoury scatter. Toast the savoury scatter until slightly browned. Now add in your cooked quinoa, and greens. Gently heat through until greens are wilted.
To serve, remove the quinoa salad from the heat and divide your mixture between bowls and drizzle over with tahini dressing.
