Ready in 30 minutes | Serves 4


1 box Red Lentil Penne

1 cup walnuts

1½ cups mixed herbs (coriander, flat leaf parsley and basil)

¼ cup Organic Savoury Yeast Flakes

¼ cup Organic Olive Oil, Extra Virgin Cold-Pressed

1 clove garlic, crushed

1 lemon, juiced

2 cups field mushrooms, sliced

salt and pepper, to taste


Cook the pasta according to the packet directions. Drain and set aside.

Combine the walnuts, mixed herbs, yeast flakes, oil, garlic and lemon in a food processor or high speed blender, and pulse until smooth.

Add some oil to a pan over a medium heat, then add mushrooms and sauté for 8-10 minutes. Add the penne and stir to combine, mixing in some yeast flakes or parmesan. Stir through the pesto and season to taste. Divide amongst 3 bowls and serve!
