NUT ROAST

Ingredients

1 cup Organic Cashews, RAW Whole

½ cup Organic Brazil Nuts

½ cup Organic RAW Whole Almonds

⅓ cup pistachios, shelled

1 tablespoon Organic Sesame Seeds, Hulled

4 shallots, finely chopped

1 can Organic Tomatoes, Chopped (juice drained)

1 tablespoon Tomato Paste

2 organic eggs, beaten

100g mature cheddar cheese, grated

1 teaspoon Paprika

1 teaspoon Thyme

1 tablespoon fresh Sage, finely chopped

1 tablespoon fresh mint, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon Brown Rice Unpasterised White Miso (Genmai Shiro)

1 tablespoon freshly squeezed lemon juice

sea salt and black pepper, to taste

Method

Preheat oven to 180ºC. Line a standard loaf tin.

Add all the nuts to a high speed blender or food processor and process into a crumb.

In a large bowl, combine ground nuts with all remaining ingredients. Mix thoroughly.

Scoop mixture into prepared tin. Bake for 45 minutes to 1 hour, until firm and golden.

Cool slightly, then lift out of tin and serve.
