Ready in 45 minutes | Serves 3-4
1 cup Organic Couscous, Spelt Wholemeal (or quinoa for a gluten free option)
1 tablespoon Organic Olive Oil, Extra Virgin Cold-Pressed
¼ shallot, finely chopped
1 garlic clove, minced
pinch of Organic Cayenne Pepper
pinch of Organic Ginger Powder
1 teaspoon Organic Ground Turmeric
2 cans Organic Tomatoes, Chopped
cucumber, roughly chopped
toasted pita wedges
First prep your couscous by placing a half cup in a bowl and covering with boiling water. Once the water is fully absorbed, fluff with a fork and place in the fridge while you prep the rest of this dish.
Heat the olive oil in a large pan over medium heat. Add the shallot and saute until soft. Now add the garlic, spices, salt, chickpeas and tomatoes; simmer for around 20 minutes.
To serve, divide your couscous between bowls, the add your spiced chickpea mix, cucumber and coriander. Serve with toasted pita crisps.
