Ready in 30 minutes | Serves 4
1 tablespoon Organic Olive Oil, Extra Virgin Cold-Pressed
1 red onion, diced
2 leaves kale, stripped off stem, chopped
2 tomatoes, diced
2 bunches broccolini
1½ cups Organic Tomato Passata
Organic Jasmine Rice Crumbs (to garnish)
Fresh basil, to garnish
Cook pasta according to packet directions. Strain and transfer to a bowl, then drizzle through some olive oil. This helps prevent the pasta from sticking together.
To make the sauce, add olive oil and onion to a large pan over a medium heat. Sauté until translucent and slightly browned. Add the kale, tomatoes and brocollini, and cook for another few minutes.
Add the tomato passata and TVP and stir well. TVP absorbs a lot of liquid, so if your sauce is on the dry side, add more passata or water. Stir until you reach your desired sauce consistency. Simmer for a few more minutes.
Serve pasta into bowls and stir through your spaghetti sauce. Top with jasmine rice crumbs and fresh basil. Enjoy while hot.
