FRESH AND LIGHT SORGHUM SPAGHETTI WITH OLIVE AND PEAS

Ingredients

Organic Sorghum Spaghetti

1 bunch of coriander

1 clove garlic, crushed

2 tablespoons Organic Olive Oil, Extra Virgin Cold-Pressed

salt and pepper, to taste

1½ cups frozen peas, blanched

¼ cup freshly grated Parmesan or Organic Savoury Yeast Flakes to serve (optional)

Method

Cook your pasta according to the directions on the packet.

Add coriander and garlic to a food processor and blitz until finely chopped, scraping down the sides if required. Drizzle in the olive oil and process to a pesto consistency. Season to taste.

Combine your cooked pasta, pesto and peas in a bowl and mix through to combine. Sprinkle with grated Parmesan or savoury yeast flakes to serve.
