CUMIN SCENTED RICE

Ingredients

1 cup Organic Black Rice

4 tablespoons Organic Olive Oil, Extra Virgin Cold-Pressed

1 red onion, finely chopped

3 garlic cloves, grated

2 teaspoons cumin seeds

1 lemon, juiced

¼ cup coriander, roughly chopped

¼ cup parsley, roughly chopped

2 tablespoons chives, finely chopped

Natural Herb Salt (to taste)

1 avocado, peeled, pitted

Organic Paleo Savoury Mix (to serve)

DRESSING

6 tablespoons Organic Olive Oil, Extra Virgin Cold-Pressed

2 limes, juiced

2 tablespoons Organic Almond Butter

½-inch piece fresh ginger, grated

½ teaspoon sea salt

Method

Cook rice according to package instructions.

Heat 2 tablespoons of the olive oil in a large pan over medium heat. Add onion and sauté for a few minutes until browned. Add garlic and cumin and sauté for a few more minutes, stirring occasionally.

Add rice and mix to combine. Stir in the remaining oil, lemon juice, coriander, parsley, and chives. Season to taste with herb salt.

Dress that salad and serve with a generous handful of Paleo Savoury Mix.
