CANIHUA SALAD WITH CITRUS DRESSING

Ingredients

FOR THE SALAD

1 cup Organic Canihua

1 avocado, diced

½ red onion, cut in wedges & halved

1 orange, peeled and cut into segments

½ cup fresh coriander

FOR THE DRESSING

3 Organic RAW Mango Slices

½ cup lime juice

2 tablespoons Organic Olive Oil, Extra Virgin Cold-Pressed

Natural Sea Salt

Method

Cook canihua according to packet instructions. Allow to cool.

Combine cooked canihua with the remaining salad ingredients in a bowl.

Soak mango slices in warm water (just enough to cover them) until softened.

Blend all dressing ingredients, including the reconstituted mango plus 1-2 tablespoons of the soaking liquid, to a smooth consistency. Pour dressing over salad and serve.
