Cook your black bean spaghetti according to package directions.
In a food processor, combine the walnuts, coriander, parsley, basil, yeast flakes, olive oil, garlic and lemon and pulse until smooth. Set aside while you prepare the mushrooms.
Heat a pan over medium heat and once hot add a bit of olive oil and your mushrooms and sauté for 8-10 minutes.
Add the cooked spaghetti to the pan and stir to combine, adding more yeast flakes (if you want it extra ‘cheesy’ plus some salt and pepper to taste. Next stir through the pesto and divide amongst 3 bowls and serve!
