Sticky Prune Cake

500g prunes

200ml natural or coconut yoghurt

100g Organic Demerara Brown Sugar

100g Manuka honey

200ml Organic Olive Oil, Extra Virgin Cold-Pressed

4 free-range eggs

300g Organic Spelt Flour, White

1 teaspoon baking soda

2 teaspoons Ground Cinnamon

2 teaspoons mixed spice or allspice

1 teaspoon ground nutmeg


Heat oven to 180ºC. Line a large cake tin with baking paper.

In a small bowl, mix 300g of prunes and yoghurt. Set aside.

In a bigger mixing bowl, blend together the sugar, honey, oil and eggs using a wooden spoon. Sift in the remaining powder ingredients and mix together. Add the prunes soaked in yoghurt and fold to just combine. Do not over mix.

Pour mixture into the prepared tin and arrange remaining prunes on top. Bake for about 30 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Remove from the oven and cool in pan before serving.
