6 free-range eggs
500g Organic Golden Sugar
150g butter (softened)
3 tablespoons Manuka honey
zest of 1 lime
1 teaspoon grated nutmeg
1 teaspoon ground cardamom seeds
1 teaspoon Organic Coconut Nectar Syrup
125g candied orange peel (chopped)
Preheat oven to 150°C. Line and grease a 30cm spring form tin.
In an electric mixer, beat the eggs and sugar until thick. Add the butter, honey, lime zest and spices while beating. Fold in the almonds, polenta, coconut nectar syrup and candied orange.
Pour mixture into prepared tin and bake for 110 minutes in a fan forced oven.
Allow to cool for 30 minutes. Cut into wedges and serve with a scoop of mascarpone.
