Combine all ingredients, excluding the peanut butter in a small bowl. Using a double boiler set up, continually stir together over a low heat, until melted.
Spoon half your chocolate mixture into mini silicon moulds, the put in the freezer for 5 minutes to set.
Remove silicon moulds from the freezer, then place about half tablespoon of peanut butter on top of each the chocolate bases. Even this out as much as possible.
Carefully spoon remaining chocolate mixture on the top of the peanut butter and return to the freezer to set.
You can keep your peanut butter cups in the freezer and take them out as you go. They taste really good even a bit on the frozen side, or if you prefer, let them sit for 15 minutes to soften up a bit.
