MINT AND MATCHA CHIA PUDDINGS

Ingredients

2½ cups Organic Coconut Milk

4 tablespoons mint leaves, tightly packed, plus extra for garnishing

½ cup Organic Chia Seeds

1 tablespoon Organic Coconut Nectar Syrup

1½ tablespoons Organic Matcha Powder (plus extra for garnishing)

Organic Coconut, Desiccated to garnish

fresh raspberries, to garnish

Method

In a large bowl, combine the coconut milk and mint leaves and let sit for 15 minutes to infuse the flavour.

Squeeze mint leaves with your hands to extract the oils and discard leaves.

Add remaining ingredients and whisk until well combined.

Cover and place in the fridge for about 2 hours, to chill and thicken.

Spoon pudding into 4 to 6 glasses or jars and garnish with matcha, desiccated coconut, fresh raspberries and mint.
