Desserts don’t need to be full of sugar and fat to be indulgent. This super easy, super healthy dessert recipe contains just four basic ingredients and takes literally zero effort to make. It’s also loaded with superfoods – chia, coconut and raw cacao!

Raw cacao versus cocoa, what is the difference? Raw cacao is made by cold-pressing unroasted cacao beans to take out the fat (cacao butter), and what remains goes on to become the powder. Raw cacao contains a serious amount of antioxidants which helps protect your body from free radical damage.

Cacao is also a great source of minerals, including magnesium, iron, potassium, copper and manganese – all of which are essential to achieving optimal health.

In contrast, cocoa products have been roasted at high temperatures before pressing. The process of using high heat significantly reduces the nutritional compounds in the beans.

Per serve, chia seeds will give you:

11 grams of fibre
4 grams of protein
9 grams of fat, 5 grams of which are omega 3 fatty acids
Five times the amount of calcium than found in dairy milk
Twice the amount of protein of any other bean seed or grain
Three times the amount of iron in spinach
Eight times more omegas than salmon
Two times the amount of potassium of a banana
Three times the amount of fibre in oats

It’s the coconut milk that makes this dessert so creamy. Coconut milk is incredibly rich in vitamins and minerals. It contains high levels of some crucial minerals like iron, calcium, potassium, magnesium and zinc, and significant amounts of vitamins C and E. Just one cup of coconut milk contains 13 grams of carbohydrates, 5 grams of fibre, 5 grams of protein and 57 grams of fat. While the fat content is kinda high, these are mainly medium chain fatty acids that are metabolised differently to other fats in the body, burned rather than stored as fat.

Now, where’s that whisk…

First, place the can of coconut milk in a bowl of hot water to warm the contents and melt solid lumps. Then shake well before opening the can.

Place all ingredients in a medium sized bowl and whisk vigorously until you’ve got a thick creamy mixture.

Equally divide the mixture between two small glass jars and leave in the fridge to set. This will only take about one hour, and then you can enjoy!
