1 cup Organic Sultanas

1 cup Organic RAW Pitted Dates (chopped)

1 cup Organic Sundried Apricots (chopped)

1 cup Organic Brazil Nuts (chopped)

½ cup Organic Sunflower Seeds

¼ cup Organic Sesame Seeds, Hulled

½ cup Organic Crystallised Ginger

2¼ cups fresh orange juice

2 free-range eggs (beaten)

2 tablespoons Organic Coconut Oil, Virgin Cold-Pressed

1 teaspoon Organic Vanilla Extract

zest of 1 orange

2 cups Organic Wholemeal Flour, Rollermilled

¼ cup Organic LSA

2 teaspoons Supernatural Foods Raising Powder (baking powder)

½ teaspoon ground ginger

½ teaspoon whole cloves

½ teaspoon ground nutmeg

½ teaspoon Ground Cinnamon

2 teaspoons Cointreau (optional, for glazing)


Preheat oven to 150°C. Line a 20cm square cake tin with baking paper.

Place first 8 ingredients in a large saucepan and bring slowly to the boil, stirring continuously. Simmer for 3-5 minutes. Cool, then stir in the beaten eggs, coconut oil, vanilla extract and orange zest. Fold in the rest of the dry ingredients to form a batter.

Spoon mixture into the cake tin. Bake for one to 1¼ hours. Test with a skewer.

Cool in tin, then brush with glaze. Store in an air tight container and refrigerate.
