250g Organic White Flour, Stoneground

2 teaspoons Supernatural Foods Raising Powder (baking powder)

½ teaspoon Natural Sea Salt

200g Organic Golden Sugar

80g Organic Coconut, Desiccated

1 can Organic Pineapple Chunks in Fruit Juice (drained)

1 free-range egg (large)

240g natural or coconut yoghurt

1 teaspoon Organic Vanilla Extract

50ml Organic Safflower Oil

Organic Coconut Chips (for topping)


Preheat oven to 200°C and grease muffin tin.

In a large bowl, mix together the flour, raising powder, salt, sugar and coconut.

Finely chop 170 grams of pineapple chunks in processor. Add the egg, yoghurt, vanilla and oil and blend.

Add liquid mixture to dry ingredients and stir until just moistened.

Spoon mixture into the muffin tin and top with coconut chips. Bake for 15 – 20 minutes, or until golden and springy to the touch.

Allow to cool for around 10 minutes before removing from muffin tin.
