Ready in 25 min prep | 90 min cooking time | Serves 8 individual puddings
1 cup Organic Sultanas
1 cup Organic Raisins
1 cup wholemeal breadcrumbs
1/3 cup Organic White Flour, Stoneground
2 tsp mixed spice
1/4 cup Organic Sunflower Oil or coconut oil
1/2 cup Organic Demerara Brown Sugar or raw sugar
1 green apple, grated
Put cranberries, sultanas, raisins and apricots into a mixing bowl. Add orange zest. Pour over orange juice and mix. Cover and leave for 1-2 hours or overnight if wished.
Prepare the pudding bowls. Grease 8 individual 1 cup pudding bowls and line the base of each with a disc of baking paper. Cut out a further 8 discs the size of the tops. Cut squares of foil, big enough to cover the top and half the depth of the bowls and place a pleat in the foil – set aside
In a large mixing bowl put ground almonds, breadcrumbs, flour and mixed spice. In a separate bowl beat together oil, egg and brown sugar until thick.
Add to the dry ingredients with the fruit mix and grated apple. Spoon into prepared bowls and smooth the tops. Place the extra discs of baking paper onto the pudding mixture. Cover with the foil squares, with the pleat in the center and scrunch the sides.
Place in a steamer and steam for 1 ½ hours. Remove from the steamer and stand for 5 minutes before turning out to serve.
These can be made ahead and stored in the fridge or frozen. Thaw in the fridge if frozen and reheat in the steamer for a further 45-60 minutes. Alternatively depending on the type of pudding bowl used they can be reheated in the microwave.
