Cook the quinoa according to packet instructions. Set aside to cool in the fridge for 20mins.
Add all ingredients to a high-speed blender with the quinoa. Process to a smooth and creamy consistency. (You can add a little water if you think it’s too thick).
Pour mixture into 4 ramekins and then place in the fridge overnight to set.
Serve with your favourite toppings such as nuts, desiccated coconut, cacao nibs or berries.
