Ingredients

500g Organic Spelt Flour, White

2 tablespoons Organic LSA

2 teaspoons Supernatural Foods Raising Powder (baking powder)

200g Organic Golden Sugar

125g butter (room temperature)

1 tablespoon Organic Vanilla Extract

200g Organic RAW Whole Almonds

3 free-range eggs (lightly beaten with pinch of salt)

150g Organic Dried Figs

a little milk and beaten egg for glazing

Method

Preheat oven to 180°C and line a baking tray.

Place all dry ingredients (except for the almonds and dried figs) in a bowl. Mix in the butter using your fingertips.

Make a well in the centre, add beaten eggs, vanilla extract and almonds. Combine ingredients using your hand and press together to form a ball. Divide into 6 portions and roll into logs of about 30 cm long. Press top of each log down lightly to flatten.

Arrange flattened logs on prepared tray. Brush with mixture of milk and beaten eggs and press sliced figs on top. Bake for about 20 minutes, or until lightly golden.

Remove from oven and cut logs diagonally into 1-cm thick slices. Arrange slices on oven tray and bake for a further 20-25 minutes, until dry and firm. Cool and keep in air-tight container.
