1½ cups Organic Coconut Flour

1½ cups Organic White Flour, Stoneground

3 teaspoons Supernatural Foods Raising Powder (baking powder)

½ teaspoon baking soda

½ teaspoon Natural Sea Salt

1 cup Private: Organic Panela Sugar

¼ teaspoon Organic Guar Gum

1 cup Organic Coconut Oil, High Heat Cooking (melt by placing in hot water)

4 free-range eggs (lightly beaten)

3 teaspoons Organic Vanilla Extract

3 ripe bananas (mashed)

1 can Organic Coconut Cream

1 cup Organic Coconut Chips


Preheat oven to 160°C. Line a grease-proof loaf tin.

Sift together all dry (powder) ingredients in a bowl. Set aside.

In a separate large bowl, combine all wet ingredients. Fold in the dry mixture until just combined, then fold in coconut chips.

Transfer mixture into prepared tin and smooth the surface. Bake for about 1 hour, until golden brown, and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool slightly in the tin.

Slice and devour warm or at room temperature, or add your favourite spread.
