These are as close as you will get to a breakfast cookie, or being able to justify eating cookies for breakfast! These nutrient dense cookies contain all the good stuff you’d otherwise be having in your breakfast bowls or overnight oats… oats, almonds, nut butter and chia seeds!
When you have half an hour, make a double batch of these and save them for those mornings where you have zero time and need to eat. Not only will you be doing your body good, you’ll save yourself some money too. Making your own food from scratch is also pretty rewarding, especially if you’re making it to share with (and nourish) others.
Breakfast is a tough one because the majority of supermarket shelves are filled with over processed cereals, and muesli bars – just boxes of refined ingredients really. While some of the ingredients might be whole, the issue with a lot of these processed foods is that they are poor-quality, nutritionally void and filled with all sorts of chemical or artificial additives your body does not know how to process.
So forget those boxes, and eat more REAL food. No excuses here either, these healthy cookies which taste a lot like banana cake are completely delicious and really quick to make, no equipment required!
Pre-heat your oven to 180 deg C, and line an oven tray with baking paper.
Mash the banana and chopped dates in a large bowl. Add all remaining ingredients and mix until combined.
Roll mixture into palm size balls and place on the lined tray, making sure there’s space between each other for expansion. Use a fork to press down on each ball to form into cookies.
Bake for around 15 minutes or until golden brown.
While the cookies are baking, make the cashew lemon drizzle. Combine all ingredients in a food processor or high speed blender and blend until creamy and smooth, and thin enough to drizzle on your cookies. You might need to add more water to get to this point.
Once cookies are done and cooled off, drizzle with the drizzle!
