Almond Butter Cheesecake Brownie Bite Sandwich

Ready in 30 min prep, 2-3 hours freezing time. | Serves 2-4


Utilising the awesomeness of the Brownie Bite mix from Ceres, you can whip up a basic coconut banana & almond butter ice cream that works really well with the chocolatey brownie “cookies”. This is a great dairy free dessert and is super fun for the kids to get involved with the baking/prepping as well.

Ingredients

1 Brownie Bite Mix

COCONUT ALMOND FROZEN CHEESECAKE

1 tin Organic Coconut Milk

¼ cup Organic Maple Syrup

2 banana, frozen in slices

1½ tbsp Almond Butter in Conversion to Organic

pinch of salt

Method

1. Create Ceres Organics Brownie Bites according to packet instructions.

2. For the filling: In a blender, blitz all the cheesecake ingredients to make a smoothie like consistency. Pour into a container and freeze for 2-3 hours or overnight.

3. To serve, put your filling mixture back into a blender for a “fro-yo” like texture and serve. Otherwise, remove from freezer for a few minutes to soften, then scoop and sandwich between the Brownie Bites!
