Not reserved just for Aucklanders, the classic oatmeal is getting a makeover with this delicious flavour combination of jaffa and coconut. One teaspoon of punchy orange zest is all it takes to spice up those old oatmeal flavour combinations you’ve currently got on rotation. Combined with the addition of coconut to offer a unique and tasty twist, healthy breakfast recipes like this are so good you’ll dream about them.

This recipe utilises two types of dairy-free milks, almond and coconut. When it comes to almond milk, it is much more nutritious to make your own, and your efforts will be rewarded with the amazing taste! Unbeknownst to many, the almond milk available at your local supermarket only contains around 2.5% almonds. Our recipe contains one cup, so you reap the benefits of the one of the ultimate beauty foods. Boasting high levels of protein and healthy fats, almonds help fight aging by keeping our skin glowing and supple with their combination of beneficial vitamins and minerals including vitamin E, copper, magnesium, manganese, potassium, calcium and iron.

Adding coconut milk to the mix means you get even more bang for your buck in terms of nutrient content. With all coconut products becoming increasingly recognised as the superfood it is, they are rich in fibre, vitamin C and A, iron and calcium. It’s high levels of medium chain saturated fats, specifically lauric acid, has anti-viral and anti-bacterial abilities that can get rid of potentially harmful disease causing organisms. Rich and filling, the healthy fats in coconut milk also does not spike your sugar levels, keeping you fuller for longer.

It’s important when making this recipe that the oats used are minimally processed, the closer to their natural state the more nutrients they contain, including selenium, manganese and magnesium. The reason this is so important is because if the oat is minimally processed, it performs much better as a slow absorbing carbohydrate.

Ingredients

1 cup Organic Rolled Oats, Jumbo Wholegrain

1½ cup of your choice of nut milk

zest of 1 orange

Organic Maple Syrup (to taste)

Method

In a jar, combine oats, your choice of nut milk and orange zest, and leave to soak overnight in the fridge, so it’s all ready to go in the morning.

Making your own nut milks is actually pretty easy, almond milk was used here but coconut milk is another nut milk that is super easy to make as well as being pretty economical.

In the morning if you’re grabbing and going, check your oats and stir through more nut milk if required. Add your maple syrup or sweetener of choice and a small handful of desiccated coconut. If you’ve got time, transfer your oats to a bowl, stir through more almond milk and a drizzle of maple syrup and a handful of desiccated coconut.
