ANCIENT GRAIN HOT CEREAL WITH CARAMELISED APPLES

You’ve tasted ‘caramelised apples’, and now you’re hooked. There is something special about an “apple and porridge” combination that sends our taste buds into overdrive. Forget the sachet stuff, this breakfast bowl contains just natural food, is gluten-free, dairy-free, and totally delicious!

One of the great benefits of this breakfast treat is that you’re going to get some decent amounts of fibre and protein in you. Sweetened only with Manuka honey, this recipe is also great for those watching their sugar intake. Not only is Manuka honey a great choice of sweetener, it contains many medicinal properties too. Manuka honey is known for its healing powers and contains high levels of antibacterial properties. Combined with coconut oil, apples and cinnamon – you have yourself a caramel sensation. Coconut nectar would also work well in this recipe, if you don’t eat honey.

This gluten-free hot cereal moves away from traditional breakfast grains, like oats. It uses organic hulled millet and organic amaranth. Both grains contain high levels of fibre and protein (a nutritional upgrade from say, white rice) and which should be staples for any well stocked whole foods pantry.

To make yourself this warming breakfast bowl will take around thirty minutes. Yes, it takes longer than microwaving some sachet quick oats, but it’s totally worth the effort. Forget the highly processed packet cereals full of ingredients with names you can’t even pronounce and try making your own from scratch.

Ingredients

FOR THE CARAMELISED APPLES

2 tablespoons Organic Coconut Oil, High Heat Cooking

5 green apples (cored and cut into ½ inch pieces)

2 tablespoons Manuka honey

1 tablespoon Ground Cinnamon

FOR THE HOT CEREAL

¾ cup Organic Hulled Millet

¼ cup Organic Amaranth

1½ cups water

1½ cups Almond Non-Dairy Beverage – Unsweetened

OPTIONAL TOPPINGS

Organic Chia Seeds

Organic RAW Whole Almonds

Organic Pumpkin Seeds

plain kefir or yoghurt

Method

Heat coconut oil in a frying pan. Add apples, honey and cinnamon and sauté until caramelised, about 15 minutes. Set aside.

In a saucepan, heat millet and amaranth until they smell “toasty”, about 2 minutes. Add water, almond milk and salt, and bring to the boil. Reduce heat and cover to simmer, stirring occasionally, until grains are soft with a creamy consistency, about 15 minutes. Remove from heat and let stand as cereal will continue to thicken.

Scoop cereal into bowls and top with caramelised apples. Sprinkle with your choice of toppings.
