'Drying' preserves fruit, even in the absence of refrigeration, and significantly lengthens its shelf life. When fresh fruit is unavailable, impractical or out of season, dried fruit can provide an alternative. Like fresh fruit, dried fruit can be rich in vitamins (A, B1, B2, B3, B6, pantothenic acid) and dietary minerals (calcium, iron, magnesium, phosphorus, potassium, sodium, copper, manganese). And since 'dehydration' may result in water loss up to seven parts out of eight, dried fruit possesses a stronger flavour than its fresh counterpart. Dried fruits are great to snack on or added to baking mixes and breakfast cereals. They lend flavour and round up the taste of many dishes.
Our dried fruits are naturally sun-dried and produced without sulphur dioxide. This results in a dark fruit colour – in contrast to the bright orange and yellow colours of non-organic dried fruits which have been preserved by 'gassing'.
